Lentil Dip
Ingredients:
1 can of green lentils, rinsed and drained
1 red pepper, finely chopped
½ cup dried currants
3 green onions, finely chopped
Dressing:
1/3-1/2 cup of olive oil
¼ cup red wine vinegar
½ tsp cumin
½ tsp cinnamon
1 tsp lemon juice
1 tsp Dijon mustard
A pinch of cloves
Directions:
1. Combine lentils, red pepper, currants and green onions in a bowl.
2. Combine dressing ingredients in a jar and shake well.
3. Pour dressing over lentil mixture and stir to combine.
4. Serve with your favourite chip or nacho.
