Crispy Baked Cauliflower

Ingredients:
- Head of cauliflower
- 1 tbsp olive or coconut oil (or butter)
- 1 tbsp maple syrup
- 1/4 cup milk (nut or dairy milk)
- 1 egg
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 cup cornmeal
- 1/2-3/4 cup Panko crumbs

Directions:
1. Pre-heat your oven to 400F.
2. Cut up your cauliflower into bite sized chunks (or buy pre-cut cauliflower to save time and clean-up).
3. In a separate bowl combine the egg, oil, maple syrup, milk, spices and salt and mix with cauliflower florets ensuring they’re nicely coated.
4. In a separate bowl whisk together cornmeal and panko crumbs.
5. In batches, add dry mixture to coated cauliflower.
6. Line up breaded cauliflower with plenty of space in between on a baking sheet.
7. Bake at 400F for 30 minutes, flipping at the half way mark.
8. Plate and enjoy :)

Optional:
1. Combine 1/4 cup hot sauce (or wing sauce) in a small saucepan with 1 tbsp of butter and 1 tbsp maple syrup. Heat on low until well combined.
2. Drizzle over cauliflower for the last 5-10 minutes of baking in the oven.
